Peerkangaai kootu

Peerkangai is a very unique vegetable, which does not enter into my kitchen very often especially post marriage. My in-laws or my hub for some reason do not like this. But my mom makes a wonderful kootu (normal and a masala kootu) with this. Today I tried making the normal kootu and for a change someone liked it and asked for more!!! 😉 I have saved the peerkangaai thol to make thogayal later.

1 peerkangai medium sized, peeled, cored and chopped
1/2 cup mix of kadalai paruppu and paasi paruppu (Adjust proportion as you like. I like more kadalai paruppu)
1 tomato chopped
1/2 onion chopped
2 teaspoon sambar powder
1 dry red chilli, mustard seeds, cumin, urad dal, curry leaves, hing for tempering
3 tablespoon oil
Salt to taste
Pinch of turmeric
1 cup water (Add more if you like more gravy)

Method:
1. Soak the dal in water for about 20 mins. Drain and keep aside.
2. Add oil to pressure cooker, and add the tempering.
3. Add onion and fry for a minute until golden brown.
4. Add tomatoes and fry for a minute. Then add the chopped peerkangai, turmeric powder and fry for 2 minutes.
5. Add sambar powder and stir. Add dal, water, salt and pressure cook for 2 whistles. Serve hot with roti or rice.
